This was another salad we had this week, and it was fabulous! Very light, easy, and full of fresh ingredients. It was a beautiful salad, and I regret that I didn't get any pictures of it, but the camera wasn't working quite right, and my kids were whining about how hungry they were....I'm sure you have this problem all the time while taking pictures of your food. Right?
Okey-dokey. Got this one from Eat Better America also.
You will need:
Tilapia (however many to feed your family, I used 3)
paprika, salt, pineapple juice (from the can used below), cooking spray
1/2 can of crushed pineapple: juice reserved (more if your making a bigger salad)
1 C strawberries, halved
1/4 cup of chopped cucumber
1T wine vinegar
Chopped green onion
Spinach
1] Turn your broiler on. Put the tilapia in a baking dish and spray with cooking spray. Pour all but 1T pineapple juice, add salt and paprika.
2] Broil until done (recipe said 6-8 minutes) Ours took 10-12 ish
3] Mix pineapple, 1 T pineapple juice, strawberries, cucumber, wine vinegar, and onion
4]Lay a bed of spinach, top with tilapia, and top that with you strawberry-pineapple salsa.
